Sweet Potatoes - From mashed potatoes to dessert
The ginger root
vegetable is known in the world as sweet potato. It seems that it appeared in
stores a long time ago and is already quite casually on the shelves next to
ordinary potatoes. But in the home kitchen, sweet potatoes never really took
off. Perhaps because their frankly sweet taste inevitably evokes an association
with frozen tubers?
Meanwhile, in Latin
America, where sweet potatoes come from, they are used in both tail and crest:
they make an imitation of stir-fries from sweet tubers and use in mashed
potatoes, cakes, and cream for desserts. After all, the sweetness of potatoes
with a sweet potato flavor is far from everything. If you taste and love, there
is plenty of pumpkins, pear, and banana taste all at once.
We've asked the chefs
to tell you how to get the best out of sweet potatoes. And it turns out that
the sweet tubers are well suited not only for exotic dishes but also for
long-familiar recipes such as Italian gnocchi, Middle Eastern hummus, or eggs
Benedict.
Boiled sweet potato pie
Tropical notes
magically appear in this unusual serving of Eggs Benedict served by Chef Maxime
Sorokin of Gae Sang Café. Sweet potatoes give pancakes a sweet taste, so it
seems that some exotic fruit such as guava is added to the dough. Sesame seeds
are scattered on the shiny surface of the red turmeric mayonnaise outwardly
resembling a passion fruit pulp.
Sweet potato hummus with shrimp
Chickpea, which is the
main ingredient in chickpeas, dries up a bit on its own. Therefore, a delicate
sweet potato cream is the addition to the hummus that hummus would like to ask
about if they knew how to talk. In addition, sweet potatoes perfectly create
the bitterness of sesame tahini and serve as a favorable background for fried
garlic shrimp, which also have sweet notes. Andrey Palisica, Chef of Irwin
Restaurant. Rekamoreocean", brings all the puzzle elements together,
sniping to balance the plate.
Sweet potato gnocchi with sage and spinach
If in Italy gnocchi is
made from regular potatoes, then in the Middle East (for example, in Israel)
sweet potatoes are used. Otherwise, this is a classic recipe with ricotta and
Parmesan. Sweet potato pillows have a very delicate, even sweet taste.
Therefore, the chef of Rick's Bar & Bistro Restaurant Artem Petrin rightly
believes that there is no sauce, except for sage oil, this gnocchi is useless.
Baked sweet potato and dzatziki salad
The flavor of hot
sweet potatoes benefits greatly when paired with cold cucumbers and sour cream
sauce. The green salad seems to live on the plate on its own, but in fact,
everyone here plays and sings together: the crunch of almond petals, the sticky
tenderness of sweet potatoes, and the greens, which enliven the taste. In
total, Maria Gorcheva, chef of the Polet restaurant, turned out to be a
complete delicacy that does not require meat or a side dish.
Duck thigh confit with sweet potato and caponata
Instead of duck leg,
this recipe would have included, for example, beef, roast chicken. This would still be an excellent illustration of the fact that sweet
potatoes as a side dish look more elegant than regular potatoes. Especially its
sweetness on the face of "wild meat", which the duck also refers to.
If you want to exactly repeat the recipe from Ruslan Zakirov, chef of the
Kuznya House restaurant, a detailed description of how to make duck legs can be
found here.
Sweet potatoes with wild rice and avocado cream
Sweet potatoes are one
of Australian chef Glenn Bales' favorite foods. He created something about it
for each of his restaurants, but he never repeated it. Avocado Queen's version
is simple: On the bottom is a pillow of wild rice seeds in a thin creamy sauce,
a slice of baked sweet potato, and on top, there's avocado pulp mashed with
herbs that contrast in texture with all the other layers. It is amazingly
simple, yet beautiful and juicy, with pure flavors and pure colors.
Carrot cake with sweet potato
Sweet potatoes are
made from sweet potatoes all over America. Everything is simple here: Take the
classic carrot cake recipe and replace some carrots with sweet potatoes. Andrei
Nesterenko, head chef at Chinook, a unique Latin American restaurant, does just
that. In a cream cake, sweet potatoes taste like fried bananas or baked apples.
And do not think that since sweet potatoes are sweet, you need to put less
sugar: you need to put exactly less sugar as stated in the recipe. And for a
splash, add more cinnamon, vanilla, and quince jam.
